Poland to corner the caviar market?

Poland is emerging as a player in the caviar business, exporting the delicacy to countries as far afield as Uruguay.

Nevertheless, Polish producers are still lagging behind their peers in Italy, Germany and France, which are currently the biggest exporters of caviar in the EU.

Although Polish producers have exported several tonnes of the fish roe since November, insiders stress that running sturgeon farms takes dedication.

"It's a tough type of farming," commented Szymon Łakomiak, production manager of Polish Antonius Caviar, in an interview with the TVN 24 news channel.

"These fish don't have Saturdays, Sundays and holidays off," he added.

"You have to be with them all the time, to watch over them – fish are very stressful."

Nevertheless, Antonius Caviar has ambitions to make Poland a respected player in the business.

"We have a goal of Poland taking pride in Polish caviar being a recognizable brand worldwide, with the highest quality caviar proudly produced in Poland," said Agata Łakomiak-Winnicka, sales manager of the firm. (nh)
